Our area is traditionally known for a simple and genuine cuisine, conducted by expert hands and with the use of locally produced ingredients that enhance the smells and flavors of typical dishes.
The passion and professionalism of Andrea Aiudi (executive chef with consolidated experience), is synonymous with a guarantee in the preparation of dishes based on local products and in the recovery of recipes from the past that restore ancient flavors of tradition, cooked without haste.
The dishes that characterize the menu vary in harmony with the rhythms of nature. White and sheep meats are of our production, we also use Marchigiane red meats raised a few kilometers from our Locanda. The red meats are cooked on our impressive wood-burning grill, the strong point of our Locanda.
We mainly use the products of our garden, which is located a few hundred meters from the company, while right next to the Locanda there are 2000 square meters of small fruits (strawberries, blackberries, currants, blueberries, gooseberries, etc.) which we grow with natural methods.
Thanks to the small fruits we prepare today, as happened in ancient times, jams and fresh products to be used directly in the inn or to be sold to the consumer in our company store. Around the cottage there are small oases of aromatic herbs (sage, rosemary, bay leaf, marjoram, basil, etc.) with which we flavor our dishes.
In our wood-burning oven we prepare bread with ancient grain flours and mother yeast, as well as the meats from our farm managed with skill by father Giuliano (geese, ducks, rabbits, pigeons, guinea fowl and lambs).
The pasta, typical of the Marche region (passatelli, maltagliati, tagliatelle, etc.) is strictly homemade with a rolling pin from our wonderful sfogline. The cured meats, cheeses and ricotta come from grazing farms in the surrounding area: the mountainous and undulating hinterland is rich in cattle that feed naturally.
Cakes, biscuits, pies, creams, desserts and other goodies are exclusively homemade.
In the autumn and winter months it is possible to spend happy evenings in the welcoming and spacious interiors, characterized by recovered stones and bricks and in front of the splendid fireplace you can savor succulent dinners. The restaurant room is sanitized with an ozone process and the tables are positioned at a safe distance.
The dishes are accompanied by mainly good quality wines from the Marche region, selected and presented in the Locanda's menu, which will also offer meditation wines, dessert wines, Montefeltro grappas and other drinks.
In spring and summer, it is possible to have breakfast and eat outdoors, on the panoramic terrace, where the wide spaces guarantee safety distancing.
Our menu also includes vegetarian and celiac menus.
